In honor of my soon to be brother-in-law who is from Ireland, I wanted to bake something for St. Patrick’s Day. Thinking of green I immediately thought something with mint? And then I got inspiration from those adorable girls selling those heavenly cookies. I know everyone has their own all time favorite girl scouts cookie-my fave thin mints!
So I wanted to make my own version of a thin mint whoopie pie. There was a recipe from King Arthur’s website for classic whoopie pies that I’ve always wanted to try. These are the typical chocolate whoopie pie with a marshmallow filling. I decided to use this recipe for the “cake” and make my own mint filling.
The batter is not as fluid as a cake batter, but not so stiff as a cookie batter.
The recipe makes eight very large whoopie pies or sixteen mini-sized ones. I decided to make the mini-sized ones. Using a small ice cream scooper, I placed a rounded scoop on a silpat (you can also use parchment paper) lined cookie sheet.
The whoopie pies came out extremely dome-shaped. But I always seem to have this problem when I use the convection option with my oven. I should have known better. In any case, this is how it looked like when it came out.
For the filling, I decided to go with a ganache. My Hubby found some seasonal Creme de Menthe Hershey’s Kisses that taste suspiciously like the thin mints cookie filling. Luckily my Sissy takes Hershey Kisses as a form of payment when she occasionally watches the Ai Kids so that the Hubby and I can go out on a lunch or dinner date. I borrowed a couple of these gems and decided to make some ganache. I used around 30 of these kisses and about 50 grams of cream for the ganache. The ganache was a bit thin, so I added a handful of semi-sweet chocolate chips. Once cooled, I used this ganache as the filling for the whoopie pies.
Thin mints are dipped in chocolate, so these whoopie pies took a semi-swim in melted chocolate.
And here comes the festive part. I dipped the other side into some green candy melts and sprinkled with some “lucky charms” hee hee (sorry Sissy’s fiance could resist this reference).
