Banana Nutella Mini Muffins

Banana Nutella Mini Muffins--great way to use up those day or so old bananas.


  • 1 cup all-purpose flour
  • 1/2 cup almond flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3 over ripe bananas
  • 1/2 cup white sugar
  • 1/4 cup light brown sugar
  • 1 egg
  • 1/3 light olive oil
  • 16 teaspoons nutella


Step 1 Preheat oven to 375 degrees. Line 16 mini muffin pans with liners or use 16 2 oz soufflé cups.
Step 2 In a large bowl, mix all-purpose flour, almond flour, baking soda, baking powder, and salt.
Step 3 In another bowl, mix until fully incorporated the mashed bananas, white and brown sugar, egg, and light olive oil.
Step 4 Add the banana mixture to the dry ingredients and mix just until moistened.
Step 5 Using a small cookie scoop, place one heaping scoop of batter in each liner or cup.
Step 6 Place a teaspoon of nutella in the middle of each muffin and swirl with a toothpick.
Step 7 Bake for about 12-15 minutes or until a tester comes out clean.



The next time I make these I may do the following adjustments:

  • Add a teaspoon of vanilla extract
  • Increase the light olive oil to a 1/2 c to add a little more moisture to the muffins

These store well in an airtight container.
