Kylemore Abbey Scones

Kylemore Abbey signature scones--crisp on the outside and extremely tender on the inside.


  • 450g all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 70g butter (very cold and cubed)
  • 85g sugar
  • 2 eggs
  • 280ml milk (or 1 1/4 cup milk)


Step 1 Preheat oven to 395 degrees fahrenheit (original recipe is for 200 degrees celsius) and line a baking sheet with parchment paper.
Step 2 Sift flour, baking powder, and salt into a large bowl.
Step 3 Cut cold butter into flour mixture (use a pastry cutter or two butter knives) until it resembles coarse sand.
Step 4 Add sugar and mix well.
Step 5 In another bowl, mix eggs and milk and save a little to brush over the scones.
Step 6 Make a well in the center of the flour mixture and add the egg/milk mixture. Mix just until it comes together (soft dough). Do not over mix.
Step 7 Turn onto a floured surface and roll out to about an inch thick. Cut into 2 inch rounds using a fluted cookie or biscuit cutter (preferably the latter).
Step 8 Brush tops with beaten egg/milk mixture.
Step 9 Bake for about 20-25 minutes or until tops are golden brown.
Step 10 Place on a wire rack to cool.


Notes: Use very cold butter and do not overwork the dough.  You can add 1/3 c of raisins, sultanas, dried cranberries, cherries, or chocolate chips.

Serve with your favorite jam and cream!
